History

 

Johnny Castillon is one of eight children of Elias and Maria Castillon who originate from Texas and Mexico. As a child Johnny worked alongside his family as migrant workers, traveling across the country to pick the various crops that fed America. From Colorado (sugar beets, cucumbers, onions, potatoes), to Ohio (tomatoes), to Florida (sugar cane, oranges, strawberries and grapefruit) just to name a few. That experience – hard work but having fun and working with the freshest of fruits and vegetables - would remain with Johnny throughout his life.

 

The Castillons settled in Fort Collins in 1970 and in 1973 Johnny began working at a local Mexican restaurant where his first job outside of the fields was as a dishwasher. Over the next 15 years Johnny would learn every aspect of the restaurant business.

 

After completing high school and getting his college degree from the University of Northern Colorado Johnny pursed a corporate career but always dreamed of returning to his passion of working with the freshest of foods and own and operate his own restaurant. He accomplished that goal in September 1997 when he opened Castillon’s - at the very same restaurant location where he first worked in 1973. The restaurant moved to it’s current location in January 2011.
